A phenomenally elegant and balanced cabernet franc.
A medium-bodied wine with flavors of ripe cherry, strawberry, pepper, and subtle smoke/tobacco notes from oak aging. This wine comes from the Chinon appellation of France's Loire Valley, where the vines are usually about 25 years old. With an interesting making process, fermentation takes place in stainless steel tanks using natural yeasts. Then the wine is aged for 12 months in French oaked barrels where only 25% of them are new. This process gives structure to the wine and softens the tannins, the stuff that gives the wine texture. It aids to the complexity of the taste and richness derived from the barrels.
